Hey, Kansas City folks! Jessica Fulk here, your go-to real estate friend, bringing you the lowdown on the exciting developments in Shawnee’s downtown scene.
Picture this: a former funeral home at 5815 Nieman Road getting a new lease on life, thanks to Bryan Albers and Stephanie Cashion. Their mission? To spice up the local hangout scene. Now, Shawnee’s downtown is already buzzing with bars and breweries, and these two entrepreneurs are ready to add a new flavor to the mix.
Bryan Albers, a man with a vision, saw an opportunity and grabbed it. He purchased the space, aiming to turn it into something special. But, hold your horses, this area needed more than just drinks, thought Albers and his partner, Stephanie Cashion. That’s where Cashion’s dream of opening a tapas bar came into play.
Enter Gilda’s – the soon-to-be-talk-of-the-town restaurant. It’s not your average joint; it’s a full-service experience, boasting a kitchen, a bar serving craft cocktails and wine, and a menu that’s still in the oven, set to be unveiled this upcoming spring or summer.
Who’s behind the mouthwatering menu? None other than Stephanie Cashion, the mastermind who also owns the breakfast haven Glass Cat in Bonner Springs. Get ready for a culinary journey with Spanish-inspired shareables – seafood, roasted meats, and a touch of good old American goodness.
Now, here’s the vibe they’re going for – a place where people can pop in and out, creating a sense of camaraderie in the area. And the name? Gilda’s, inspired by the tapa featuring skewered olives, anchovies, and peppers. Why Gilda? It’s a sweet and salty nod to Rita Hayworth’s 1946 film where she played a femme fatale.
Cashion’s love for Spain is palpable. “I go there as often as I can,” she says, and with Gilda’s, the goal is to transport you out of Kansas City when you step through the door. Construction is underway, envisioning a Spanish-style interior with a touch of old Hollywood glamour. Imagine a small, intimate experience – that’s what Albers is aiming for.
When the warmer months roll around, Gilda’s outdoor patio will be the perfect spot to relax and soak in the vibrant atmosphere. Albers envisions Gilda’s becoming a destination within the district, rubbing shoulders with neighbors like Beard nominee Drastic Measures, Transport Brewery, Wild Child, Friction Brewery, and more.
Stay tuned for more exciting updates, and if you’re thinking of making a move in the Kansas City real estate scene, feel free to reach out. Here’s to good food, good times, and the vibrant spirit of Shawnee! 🌮🍷
