Who’s behind the mouthwatering menu? None other than Stephanie Cashion, the mastermind who also owns the breakfast haven Glass Cat in Bonner Springs. Get ready for a culinary journey with Spanish-inspired shareables – seafood, roasted meats, and a touch of good old American goodness.

Now, here’s the vibe they’re going for – a place where people can pop in and out, creating a sense of camaraderie in the area. And the name? Gilda’s, inspired by the tapa featuring skewered olives, anchovies, and peppers. Why Gilda? It’s a sweet and salty nod to Rita Hayworth’s 1946 film where she played a femme fatale.

Cashion’s love for Spain is palpable. “I go there as often as I can,” she says, and with Gilda’s, the goal is to transport you out of Kansas City when you step through the door. Construction is underway, envisioning a Spanish-style interior with a touch of old Hollywood glamour. Imagine a small, intimate experience – that’s what Albers is aiming for.

When the warmer months roll around, Gilda’s outdoor patio will be the perfect spot to relax and soak in the vibrant atmosphere. Albers envisions Gilda’s becoming a destination within the district, rubbing shoulders with neighbors like Beard nominee Drastic Measures, Transport Brewery, Wild Child, Friction Brewery, and more.
